Recipe Steps
Step 1
Reheat the waffle in a professional oven for 20 minutes at 180°C.
Step 2
Prepare and arrange the caramelized onions and mushrooms on one side of the plate.
Step 3
Sear and season a nice piece of beef tenderloin, then place it in the center of the plate (discover the Chef’s tip for perfect cooking).
Step 4
Add the beef juice and place the waffle on top of the beef tenderloin.
Step 5
Garnish with herbs, finely chopped, before serving.
Chef’s tip
Leave the meat at ambient temperature before cooking to minimize the temperature shock that firms up the meat. Cook in a pan with a little butter and a few drops of oil to avoid the burnt butter, basting generously during cooking to nourish the meat. Before serving, remember to leave the meat under aluminium foil for a few minutes after cooking to loosen the fibres and ensure perfect tenderness and melting.
