Recipe Steps

Step 1

 Place the shiny piece of roasted pineapple on top.

Step 2

Arrange the entremet.

Carefully place a few coconut lace crêpes here and there.

Step 4

Finish with a few zests of fresh lime.

Chef’s tip

Once the caramel has come off the heat, add a piece of butter and decook with passion fruit juice. Add the pieces of fresh pineapple and cook for a few minutes until the caramel is nicely caramelised.
